Hi all. I’m getting even more into cooking and making up my own recipes for meals recently – expect to see more recipes coming up on my blog soon.
I’ve had a couple of requests for this recipe for my gluten free creamy ham, cheese and courgette lasagne on Instagram recently so I thought I would share it on here with all of you because it’s SO yummy. A firm favourite with all of my family and friends!
Creamy Ham, Cheese and Courgette Lasagne
- 1 whole white onion
- 1 packet gluten free lasagne sheets
- 1 whole courgette
- 7 slices good quality ham
- 1/2 packet chestnut mushrooms
- 2 cloves fresh garlic
- 1/2 tsp paprika
- 1/2 tsp thyme
White Cheese Sauce
- 60 g butter can use salted or unsalted
- 60 g cornflour
- 1 pint milk
- 1/2 tsp cracked black pepper
- 200 g cheese
White Cheese Sauce
Melt the butter in a saucepan then add the cornflour.
Slowly, bit by bit, add in little bits of the milk. Stirring as you add.
Once the milk has nearly all been used, add the cheese in and final bit of milk. Stir constantly until sauce has thickened.
Pre-heat oven to 190 degrees. Chop onion, garlic, courgette, mushrooms and ham.
Layer lasagne sheets at the bottom of a large lasagne/baking dish. Ensuring all is covered.
Make the white cheese sauce using the instructions above. Mix together the onion, garlic, courgette, mushrooms and ham with the sauce.
Place and spread the mixture on top of first layer of lasagne sheets. Arrange lasagne sheets on top as before.
You should be able to make at least 1/2 more layers by repeating these steps.
Top with 50g of grated cheddar cheese.
Note: I had to make a ‘non-ham’ section for my friend when I made this batch so I didn’t mix all ingredients together as stated therefore it didn’t bake as well as it usually does!
