Healthy, Gluten Free ‘Fish & Chips’

So I hope the title isn’t too misleading first of all, as it’s not a recipe for the generic ‘fish and chips’ you probably imagined. Though, similarly, a great combination. I’ve decided to share with you all a recipe for my delectable ‘lemon and garlic cod’ and homemade turmeric wedges because it was a real treat for my whole family. Recipe #1

Lemon and Garlic Oven-Baked Cod

Ingredients

  • 250 g fresh cod loin
  • 2 cloves garlic
  • 2 tbsp olive oil extra virgin if possible
  • 1/2 squeezed lemon juice
  • 1 circle lemon butter message for a homemade recipe
  • 1 sprig spring onion
  • 1 tsp black pepper
  • 1 tsp cornish sea salt
  • 1/2 tsp chives
  • 1/2 tsp thyme

Instructions

  1. In a small dish, mix together lemon butter and olive oil.

  2. After this, chop up the garlic cloves and spring onion to add.

  3. Mix it all together and season well with pepper, salt, chives and thyme. 

  4. Add the lemon juice. The dressing should now look like this!

  5. Brush all over the cod loin, wrap in foil completely (so no juice seeps out or gets wasted) and bake in the oven for 18 minutes. Voila! 

You could alter this recipe in numerous ways – switching lemon for lime? Different combinations of herbs? Or possibly a different fish, I’ve just recommended this dressing to my nan so she can use it with sea bass!


Recipe #2

Turmeric and Herb Wedges

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 2 whole potatoes any variety
  • 2 drizzles olive oil
  • 1 tsp turmeric
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 1/2 tsp coriander

Instructions

  1. First of all, wash and chop the potatoes into 'wedge-like' shapes

  2. Place the plain potatoes on a foiled baking tray

  3. Drizzle the olive oil all over, followed by adding all of the other seasonings 

  4. Mix generously with hands and ensure all potatoes are covered 

  5. Bake on the middle shelf at 180 degrees heat for 25 minutes. They should end up looking like this!

If making this whole recipe together (the fish and chips) then pop the wedges in the oven 5 minutes before the cod and it should time perfectly!
